An honest report on what the dietitian's family ate for dinner last week... As always I strive to 1) sit down together, 2) ensure a protein for everyone, and 3) include at least one fruit and/or vegetable. Mostly it happens, sometimes it doesn't. C'est la vie.
Sunday- hubby out of town; baked chicken nuggets per the kids' request, with steamed broccoli. Roasted beet and goat cheese salad for me. Smoothies for all.
Monday- cacio e pepe (basically spaghetti with parmesan and black pepper), sourdough bread, green salads

Tuesday- chicken tacos (pinto beans for me) with fresh corn salad
Wednesday- out to dinner with sailing friends
Thursday- stir-fry with ground pork/tofu, carrots, edamame, broccoli and rice noodles
Friday- pork loin (black beans for me) with molé sauce (a creative endeavor I couldn't resist), roasted potatoes and cauliflower
Saturday- dinner at friends = Taco Truck!
